1 Lg eggplant peeled and de-seeded and diced

Dump everything into a slow cooker and set it to cook on high for 2hours. At the very end ,to add some add'l flavor , you can add in a splash of red wine or brandy!
Check it frequently if it gets dry add in more gravy.
