Cauliflower Bites

Every once in a while you just get the taste for something munchy and these little bites are the perfect thing for a snack attack!

Easy & effortless, they take about a 1/2 hour to throw together and will make your home smell simply amazing!

First take a fresh head of cauliflower and cut it up so that all you have are bite sized pieces.
Place into a baking tin.
Use whatever oil makes you happy, I used Safflower Oil.
Use the spices that make you happy. I used a sprinkle of cumin, rosemary, and curry powder, and some hot sauce.
Mix, mix, mix with your hands to make sure that every piece is well coated with spice and oil.
I also used one large clove of garlic through a garlic press and I mixed it up well to make sure it was distributed well.

Cover with foil.
Bake at a high temp (400-degrees) for 25min
After 25min remove foil and change setting to Broil for 5min to just slightly brown the cauliflower.

Depending on how you like your cauliflower you can adjust these cooking times. I left mine with a bit of a "bite" to it, but if you like yours softer then cook longer.

Once cool enough to handle you can eat these "as is" or hit them with some more  hot sauce, dip into hummus, guacomole, tomato sauce, or what ever makes you happy.  They can store in the fridge in an air tight container for a few days or until they are munched up!!

So what else can you do?
Take hot sauce mix it with vegan margarine or coconut oil, spices and make your own buffalo sauce. Take the Cauliflower and heat it up with the sauce to really get the "buffalo taste."
If you want more of a "fried" taste-- take the cauliflower and either dip it in egg (if not Vegan) or some non-dairy milk, then into some almond flower or corn starch. Fry or bake. Then re-heat it with the buffalo sauce just described.  You can also use Vegan margarine or Coconut Oil and add garlic, lemon, oregano and make a more Mediterranean sauce.   Or top the "breaded" cauliflower with some "real" or Vegan mozzarella, and let it melt over the "breaded" cauliflower and then top with tomato sauce and oregano for an Italian experience.
